Salted Soft Pretzels

Salted Soft Pretzels

Who doesn’t Love homemade salted soft pretzels! This recipe is a classic for me but inspired by Oktoberfest, the beer cheese is a MUST! This recipe is one of my very favorites and thus far most requested recipes I have. Rightfully so, I love making these pretzels and they are always a crowd pleaser, and much easier to accomplish than one might think. Serve them with your favorite cheese sauce, or make them bit size and they become a great game day snack! Of course this had to be shared early on! As the cooler weather is coming in I find myself coming back to this dish a lot.

STEP BY STEP GUIDE:

1. Activate the yeast –

In a small bowl, mix together 1 cup of warm water, 1 package of active dry yeast, and 1 Tablespoon of sugar. Let this sit until the yeast gets good and bubbly. Usually takes 5-10 min.

2. The Dough –

In the bowl of a stand mixer – mix in 1.5 cup flour, salt, brown sugar, milk. Add the yeast mixture in now and mix with dough hook until combined. Add the remaining flour and butter and mix well. In the stand mixture, or on a floured surface by hand, knead for 4-5 min. Mix into a nice ball place in a bowl and let it rise in a warm area for 60-90 min. This is a slightly enriched dough so will have a longer rise time! But it is ready when it has doubled in size.

3. Form Pretzels –

Preheat the oven to 450 degrees.

On a floured counter surface punch the dough down and divide into six portions. Roll out each portion into a 30″ long snake.

To form pretzel you will take lift the two ends up and above the middle – twist twice around each other and fold back down. Do this to all 6 snakes.

4. Boil Pretzel

This is where we get the pretzel crust and its pretty fun to watch! In a medium – large saucepan bring to boil 3 cups of water. Once boiling add 1/3 cup baking soda.

Gently place 1-2 pretzels in this mixture and let it sit for 20 seconds – flip over and boil for 10-20 more seconds. Remove and let excess water drain off. Place on to parchment covered baking sheet. Finish remaining Pretzels.

5. BAKE! –

Once all pretzels are on the tray sprinkle with coarse kosher or sea salt! sometimes i like the flakes. Bake at 450 for 8-10 min. Pretzels will be a golden brown when finished.
